All our Pinot Noir comes from a single vineyard in Tuerong where we have 17 acres of Pinot Noir. The wine is more intense than the Ocean Eight Pinot Noir. The perfume is intoxicating and by far the best feature of this wine. Make sure to pour this wine into a glass with a big balloon to experience its phenomenal perfume. There is some spicy forest floor characters with lovely cherries and raspberries. It is a subtle elegant pinot that has the best characters that Mornington can exhibit. This is grown and made to ensure it is concisely one of the best Pinot Noirs on the Peninsula.

This was a low cropping year of excellent quality. A wine geared toward lovers of elegant fruit driven Pinto Noir. If you like Mornington Peninsula Pinots then this is one of the highest quality and will not disappoint. There is a small volume of this wine so make sure you get some for the cellar. It will age beautifully for the next 10-12 years.

The grapes for this come from our best acre of vines out of our 17 acres. The fruit is meticulously grown and cropped low to ensure high quality and intense concentration. The grapes are 100% de-stemmed and then put into fermentation vats at a low temperature to ensure a slow fermentation to maximise perfume and spice. After 2 weeks of fermentation the skins are pressed off and the wine is gravity fed in to large French puncheon barrels of which 30% is new oak.

Aylward pinot noir

Aylward Pinot has been on the list for close to 12 years at Bistro Gitan. It's wonderful complex Pinot with earthy characters yet it retains the great bright fruit the from the Peninsula. It’s a great value wine that’s especially loved by the Friday lunch regulars.
