A Story in Every Glass — The Craft of Ocean Eight
At Ocean Eight, winemaking is a conversation between land, climate, and time. Our vineyards on the Mornington Peninsula are shaped by cool coastal air, volcanic soils, and a meticulous approach that values patience over haste. This film captures the quiet rhythm of our vineyard and cellar — where each hand-picked grape, each barrel, and each moment of care contributes to wines defined by balance, purity, and place. From the first pour to the final sip, Ocean Eight tells the story of family, craftsmanship, and the pursuit of cool-climate elegance.
Shaped by the sea
The Mornington Peninsula is a place where the ocean is never far away.
Its maritime climate is an important part of what makes this region distinctive,
shaping the environment in which our wines are grown.
At Ocean Eight, winemaker Mike Aylward brings this connection to life, sharing the story
of our vineyard, our region and the wines we make.

The perfect Pinot
Sourced entirely from our single vineyard in Tuerong, this is a wine defined by elegance, perfume and place. The bouquet is captivating, revealing layers of cherry, raspberry and subtle forest floor spice that are hallmarks of exceptional Mornington Peninsula Pinot Noir.
This was a low-yielding vintage of outstanding quality, producing a wine of remarkable purity and concentration. Every bunch was handpicked and carefully selected before a slow, cool fermentation designed to maximise perfume and spice. After fermentation, the wine spent eleven months maturing in large French oak puncheons, preserving its delicate fruit character while building complexity and structure.
The result is one of the finest Pinot Noirs we have produced to date.
Pour generously into a large balloon glass and allow the wine to open. The perfume alone is worth the experience.
Enjoy now alongside roast duck, mushroom risotto, slow-cooked lamb or charcuterie by the fire, or cellar with confidence for the next eight years.
Pinot Gris is where Ocean Eight began...
In this video, our Winemaker, Mike, introduces the Ocean Eight Pinot Gris 2024 and shares the story behind the wine that sparked the creation of the Ocean Eight brand.
In the early 2000s, Pinot Gris emerged as the perfect partner to Australia’s growing love of modern Asian cuisine. Its fresh, aromatic style and natural balance made it a standout with flavours like ginger, lemongrass and chilli.
Working with his family’s cool-climate vineyard in Red Hill, Mike recognised the potential of Pinot Gris early. His first small release quickly gained attention from leading restaurants in Melbourne and Sydney, growing from just 200 cases to 3,000 in only a few vintages.
Today, Pinot Gris remains one of Ocean Eight’s signature wines.
The 2024 Pinot Gris is bright and expressive, with aromas of pear, nashi and citrus blossom, layered with subtle spice and a fresh, textural finish. It’s a natural match for Asian cuisine — from Thai curries and Vietnamese salads to sashimi and ginger-forward stir-fries.
