Our Verve Chardonnay is made to highlight how our vineyard produces beautiful, unique cool climate Chardonnay. Distinctive Grapefruit and Lemon rind aromas. To taste the minerality of the wine sits firmly in the citrus spectrum and is then elevated to mouth-watering with its light crisp texture.

We had a very low yield in 2024. The poor Spring interrupted the flower's pollination on the vines. As a result there was much few grapes on each bunch of fruit. The poor Spring gave way to a mild dry Summer which was the ideal conditions for the ripening of the remaining fruit. This wine is of very high quality and has an abundunce of Grapefruit acidity. This wine will age for 10+ years and will have a very ling window of drinkability. We had a very low yield in 2024.

In 2004 when we established the Ocean Eight wine styles there was an oversupply of Chardonnay. They were big rich buttery and oaky styles and consumers started the move to Sauvignon Blanc and other alternative varieties. After travelling and learning about Chablis, we made the call to try and produce a Chablis style of Chardonnay on the Mornington Peninsula. The Cool Maritime climate of the Peninsula suits this style with slow flavour development but terrific acid retention. The grapes are picked early for citrus flavours are then pressed into old barrels for fermentation. This helps build beautiful texture in this wine.

This wine screams out for Seafood, in particular freshly shucked Oysters or slightly seared Scallops. It would also match well with a fresh white fish like Whiting, or Flathead tails.
