Our Pinot Gris is fermented in old French Oak barrels that helps make a textural Pinot Gris style. We have one of the coolest sites on the Mornington Peninsula with rich red clay soils. This ensures our Gris ripens slowly while giving maximum flavour development. The long slow ripening also helps maintain a beautiful acidity that finishes this wine off beautifully. Elusive hints of Orange peel and fennel in the aromas then some nice crisp Pears on the palate. There are very few wines that can match with Asian ingredients like Coriander, Ginger and Lemongrass but this variety suits very well. Our Pinot Gris can handle mild amounts of chilli as well.

2024 was a vintage of extremely low crops and as a result we made a small amount of this wine. The low yields did mean there was considerable concentration of flavours making this wine complex and full of flavour. The low crops have not been great for volume but the quality is fantastic for the customer. Make sure to try this wine with some Vietnamese BBQ or Thai flavours. It will age for 4-5 years so a great addition for the cellar.

We have 2 sites for our Pinot Gris. The warmer site in Tuerong (towards Dromana) on the sandy soils we pick early to maximise the beautiful acidity in the wine while our cooler site in the heart of Red Hill we pick ripe to maximise flavour development. The fruit is all handpicked and then pressed into old oak barrels (8+yrs). The wine goes through barrel fermentation and is then left on solid lees in barrel for 8 months.

An extraordinarily complex Pinot Gris that carries piercing (but delicious) candy-lime acidity through the wisteria and lilac floral character. Pears dipped in violet syrup. So unusual thanks to a bitterness and spiciness that is so tangible it's almost textural. It reminds me a little bit of white vermouth, in fact. Angelica and orris root. Galangal. Ginger powder on the finish. This is actually rather gorgeous. It could well age longer than I've indicated. Drink Now-2029
