Once O8 was established, we realised we were going to need some storage. We did a really big excavation to put in an underground barrel room. It's dug in to the clay soils of Mornington - the red clay soils keep an amazing thermal mass. It stays anywhere between 13-18 degrees all year round. Which means we can move the wine by gravity, so it's really gentle on the wines and they sit at a constant temperature. It means the wine making process can be done quite simply and naturally.
